Ubuntu 8.10 Intrepid Ibex , just released in Release Candidate and this 6 days before the official release of the final version. This is the last test version available to last-minute tinkering.
It includes a new version of Gnome, a new theme (which is not the default), but that seems to rage on the canvas, a new version of Xorg and finally a new kernel.
